Cooking Suggestion

Rub with olive oil, garlic, and herbs, then roast at 200°C for 20–25 minutes until just cooked through. Rest for 5–10 minutes before slicing. For medallions, slice thick and pan-fry for 2–3 minutes per side until golden.
